The tomato is the more economically important vegetable commodity. More than 90 million tons are produced every year everywhere in the world. China , the United States, Turkey, and Egypt are the principal producing countries. Besides, it is one of the vegetables with more diversity of uses. It is also cooked, stewed, fried, pickling, as a sauce or in combination with other foodstuffs besides the raw consumption. It is also processed whole as paste, juice, powder, etc., in the dispatched industry. At present, 25 and 30 percent of the annual world production is intended for the processing industry.

HEART HEALTH
Lycopene is thought to reduce the risk of developing heart disease, Mangieri said. A 2011 study of lycopene and heart disease studies, published in Current Medicinal Chemistry, found that most evidence supports the positive association between lycopene intake or low-dose supplementation, and reduced heart disease risk. It is presumably because of two of the acts of lycopene involving fats in the bloodstream. Lycopene, and certain other phytonutrients, may reduce lipid peroxidation. Lipid peroxidation is when fats in the blood are damaged by oxygen and in excess can trigger gradual blocking of blood vessels (atherosclerosis). Also, lycopene was shown to result in lower levels of LDL ( bad) cholesterol and triglycerides.
ANTIOXIDANT POWER
While most of the tomatoes' phytonutrients and vitamins have strong antioxidant properties, lycopene is a standout. Researchers found that lycopene was the most effective in inactivating singlet oxygen (a harmful free radical) of all the carotenoids in a test tube study published in the Archives of Biochemistry and Biophysics. This might be due to the unique molecule shape of lycopene, which is highly effective in deactivating free radicals.
STRONG BONES
Lycopene can promote bone health and aid in preventing osteoporosis from forming. A research published in the Bone and Mineral Research Journal showed that participants with higher blood lycopene rates were less likely to suffer hip or nonvertebral fracture. However, a study published in Osteoporosis International found that postmenopausal women who added lycopene to their diets for four months had reduced bone resorption (collapse of bones).
EYE HEALTH
Tomatoes contain both vitamin A and beta-carotene which can, when digested, become vitamin A. Vitamin A is known to be important for vision. According to the Linus Pauling Institute at Oregon State University, it is important to keep the retina functioning properly and for low light and color vision. It plays a role in the development of the eye too.
SKIN HEALTH
The vitamin C content of tomatoes and vitamin A are good for your skin. Vitamin C is required for the development of collagen according to the Linus Pauling Institute at Oregon State University, which keeps your skin looking youthful and helps in wound healing, and vitamin A is a compound in retinoids that are used in anti-aging skin treatments.
